Try this recipe for a change to your normal pancakes

This morning I tried this new recipe and severed them with fresh strawberries & turkey sausage served on a toothpick for Tate. He gobbled everything up and asked for more and that makes for a great start to our day! =)

Oat Pancakes




Ingredients:
1 cup quick-cooking oats
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
2 eggs, lightly beaten
1-1/2 cups skim milk
1/4 cup vegetable oil
1 teaspoon lemon juice

Directions: In a large bowl, combine the first five ingredients. Combine the eggs, milk, oil and lemon juice; add to dry ingredients and stir just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Yield: 6 servings. ENJOY!!!

I didn't think these looked all that great when I first saw this post, but then she made some for me and let me tell you, I ate like 10 of them (ok, so that's an exaggeration). These are my new favorite; you gotta try 'em! Thanks so much Jenn!!!
